Lentil Loaf, take 1  
No pictures because meatloaf isn't exactly the prettiest food.

I don't think I even ate meatloaf as an omnivore, but I've been craving it somethin' fierce lately. Lentils are incredibly cheap and make a great substitute for ground beef. This is a nice, cheap, easy and hearty recipe.

Ingredients List

2 cups water
1 teaspoon salt
1 cup lentils
1 small onion, diced
1 cup oatmeal
3/4 cup grated cheese (cheddar, swiss, jack or american)
1 egg, beaten
4 1/2 ounces sauce (tomato sauce, barbecue sauce or a mixture of the two depending on your taste)
1 teaspoon garlic powder
1 teaspoon dried basil
1 tablespoon dried parsley
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper

1. Prepare your lentils, if using the dry type, according to package directions. When they finish, remove from heat and mash with a sturdy fork. Place in large mixing bowl.

2. Stir in onion, oats and cheese until mixed.

3. Add egg, sauce, garlic, basil, parsley, seasoning salt and pepper. Mix well.

4. Spoon into well-greased loaf or 8 x 8 pan. Smooth top.

5. Bake at 350 degrees for 30- 45 minutes until top of loaf is dry, firm and golden brown.

6. Cool slightly and serve!
